RV Recipe: Easy Instant Pot Shredded Chicken

Making lunches at the campground shouldn’t be time consuming or difficult. That’s why this easy RV recipe is the perfect solution for quick, grab-and-go lunches. Get the full recipe below for making Instant Pot shredded BBQ chicken that is delicious on sandwiches, tacos, salads, and more!


  • 20 oz of barbecue sauce (avoid high sugar sauces or it will burn)
  • 1 c. chunk pineapple
  • 3 chicken breasts
  • 3/4 c. chicken broth
  • 1 c. pineapple juice from the can
  • 1 onion 
  • 1 tbsp. soy sauce


  1. Peel and thinly slice the onion. Then cut the chicken breast into thirds.
  2. Start by adding half the BBQ sauce to the Instant Pot.
  3. Add the breasts to the pot and over with the remaining BBQ sauce.
  4. Dump in the chicken broth, pineapple juice, pineapples, sliced onion, and soy sauce.
  5. Stir until chicken in thoroughly coated.
  6. Place the lid on the Instant Pot and close the steam valve. Set it to “Poultry” on high for 15 minutes.
  7. Allow a natural release for 5 minutes before switching to a quick release.
  8. Use two forks to shred the chicken, which should be tender and cooked through.
  9. You can use it immediately, or package it and save it in the refrigerator for quick, easy lunches!
